With winter about to wrap up (finally), I thought I would share one of my family’s favorite cold weather soups. Its thick, creamy and has bacon. I don’t know about you but bacon makes anything taste amazing!
Not only is this the best potato soup recipe you will find but it is so easy, even the kids can help with it! Stephanie, peel those potatoes, DJ, shred that cheese, Michelle, grab mom a glass of wine. OK so maybe not the last part but one can dream can’t she? Also where are all my full house fans at?
I took a classic and gave it my unique twist, and I promise you will love it!
The first thing you want to do is cook the bacon. I hate flying grease and I’m going to share a BIG secret with you that will make cooking bacon a breeze. Are you ready for it??? Bake the bacon! That’s right no more flying grease all over your kitchen (except maybe in the oven).
Once you have the bacon in the oven cooking, you will want to peel and dice the potatoes and add them to the croc pot.
Add in the vegetable or chicken stock and onion.
I’m going to share another secret with you! Do you hate the texture of onion but want the flavor in your soup? All you need to do is puree the onion in a blender with the vegetable or chicken stock. Its that easy. I would recommend using maybe 1/4 or 1/2 the amount you would normally use, otherwise you will end up with a very oniony tasting soup.
Set the time on the slow cooker on low 5-6 hrs. or high 3-4 hrs.
Once the potatoes have cooked through, take a potato masher and put it to work. If you want a thicker soup then keep on mashing!
Next, you want to take a small sauce pan and melt the butter or bacon grease. Whisk in the flour until it is completely combined and continue to cook for 1 minute, stirring occasionally.
Add in the evaporated milk and mix to combine, continue cooking until mixture comes to a simmer. It will get thicker.
Pour the mixture into the slow cooker with your cooked potatoes and mix until all combined.
Add in the cheddar cheese, Greek yogurt or sour cream (I always use sour cream, but both taste good), salt and pepper to taste.
Viola your done! Now comes the very best part of making any meal.. EATING IT!

Slow Cooker Potato Soup Recipe
- 6 Slices Bacon diced
- 3-4 Cups chicken or vegetable stock
- 2 Pounds Potatoes
- 1 Medium onion
- 4 TBSP bacon grease or butter
- 1/3 Cup Flour
- 1 12 Oz can 2% evaporated milk
- 1 cup shredded sharp cheddar cheese (don’t get the pre shredded cheese, for the taste will be completly different and not in a good way.)
- 1/2 Cup plain low fat greek yogurt or low fat sour cream
- 1 tsp salt
- 1/2 tsp freshly cracked black pepper
- 4 optional toppings; thinly sliced green onion or chives, shredded cheese, bacon and sour cream
Cook bacon per the packaged instructions. Side note: to make it even easier bake the bacon on a cookie sheet in the oven instead of on the stove.
Add bacon, 3 Cups chicken or vegetable stock, potatoes, and onion to slow cooker. Note: if you don’t like the texture of onion but still want the flavor. puree 1/4 onion with the chicken stock in a blender then add to slow cooker. Keep in mind that using a whole pureed onion will make your soup very oniony.
Stir to combine then cook on low 5-6 hrs. or high 3-4 hrs. Making sure the potatoes are cooked through. Use a potato masher to mash potatoes slightly. Note: If you are wanting thicker soup then keep mashing your potatoes.
Once the potatoes are fully cooked, in a small sauce pan melt the butter or bacon grease over medium-high heat.
Once melted, whisk in the flour until completely combined. Cook for 1 min, stirring occasionally.
Gradually add in the evaporated milk and whisk until completely combined. Keep cooking until the mixture reaches a simmer. It should get thicker.
Pour directly into the slow cooker with the rest of the soup, stirring until it is combined.
Add in the cheddar cheese, Greek yogurt or sour cream, salt and pepper until all is combined.
Pour into dish and serve, topped with your favorite toppings.
